Fried rice with cooked ham

Ingredients for 2 servings:

  • 1 cup jasmine rice
  • 200 g cooked ham
  • 1 bell pepper(s)
  • 1 onion(s)
  • 4 cloves garlic
  • 2 eggs
  • 4 stalks of spring onions
  • 2 tbsp soy sauce
  • 1 tbsp fish sauce
  • 4 small chili peppers
  • e.g. coriander leaves
  • n. B. Dill
  • e.g. leaf parsley
  • 2 tbsp oil
  • 10 cocktail tomatoes
  • 1 half cucumber(s)

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 40 minutes

Cook the rice in lightly salted water for about 10 minutes, drain, and let cool. Dice the cooked ham (or chicken or tofu) and the vegetables. Lightly whisk the eggs. Heat the oil in a pan and briefly fry the onions, garlic, and bell peppers, then add the soy sauce. Then add the cooked ham and fry briefly. Push everything to one side of the pan and pour the eggs into the open space and let them set. Now add the rice and fish sauce and fry everything over high heat, stirring frequently. Season to taste with salt or fish sauce. Then mix in the cherry tomatoes and, if available, fresh herbs, and serve on the plate with cucumber slices and lime. If desired, add a mixture of fish sauce, garlic, and chilies for seasoning.
