Curonian eggs

Ingredients for 1 servings:

  • 36 eggs
  • 6 herring fillets
  • 4 gherkins
  • 10 tbsp mayonnaise
  • some pepper

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 40 minutes

East Prussian

First, boil the eggs for 10 minutes until hard-boiled. In the meantime, finely grate the gherkins and drain the water (my grandmother always squeezed the gherkins with a cloth). Meanwhile, also chop the fish very finely. When the eggs are ready, peel and halve them. Then remove the egg yolks and place them in a bowl with the mayonnaise, gherkins, and fish fillets. Mix everything together and season with pepper. Fill the egg whites with this mixture. Best served with lots of other small treats at a celebration. Notes: I got this recipe from my grandmother in East Prussia (Krettingen). I remember that my grandmother always brought Curonian eggs to family celebrations and birthdays. Incidentally, my grandmother always claimed that even the Prussian king was served Curonian eggs at his coronation.
