Ingredients for 1 servings:

  • 150 g sugar
  • 1 egg yolk
  • 1 egg(s)
  • 150 ml buttermilk
  • 1 tsp baking powder
  • 200 g flour
  • 250 g currants, fresh red
  • 100 g sugar

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Sort the currants and sprinkle with 100g of sugar. After 1 hour, place the berries in a sieve and collect the juice. Mix the batter ingredients into a sponge mixture, line a springform pan with baking paper, and pour the batter into the batter. Place the currants on top of the batter and drizzle with the collected juice. Bake the cake in a preheated oven at 190°C for 30 minutes. Let it cool in the pan.
