Ingredients for 1 servings:

  • 60 g butter
  • 60 g sugar
  • 3 eggs
  • 100 g ladyfingers, grated
  • 2 tsp baking powder
  • 600 g low-fat curd cheese
  • ½ tsp vanilla, scraped seeds
  • 1 tsp lemon zest, grated
  • 250 g currants, red
  • some whipped cream
  • 1 lemon balm leaf

Stir together the ingredients one at a time, folding in the berries last. Pour the batter into a springform pan lined with baking paper and bake in a preheated oven at 160 degrees Celsius for about 50 minutes. Decorate the cooled cake with freshly whipped cream and a lemon balm leaf. The calorie information refers to one slice of cake, divided into 12 slices.
