Currant sherbet with basil

Ingredients for 8 servings:

  • 500 g currants
  • 2 ½ liters of water
  • 300 g sugar
  • 3 stalks of basil

Instructions

Working time approx. 5 minutes; Rest time approx. 3 hours; Cooking/baking time approx. 30 minutes; Total time approx. 3 hours 35 minutes

a Turkish-inspired sorbet to drink

Wash the currants and boil them in a pot with the water until the fruit bursts. Then turn off the heat, add the sugar, and stir until dissolved. Once everything has cooled slightly, strain everything through a fine sieve and pour into bottles or carafes with stoppers. Add a sprig of basil to each bottle or carafe and chill in the refrigerator. The basil may seem odd at first, but it pairs perfectly with this fruit.
