Curry chicken with rice

Ingredients for 2 servings:

  • 2 chicken breast fillets
  • 1 small can of pineapple (in pieces)
  • 1 small can/mandarin orange(s)
  • 1 cup cream/milk
  • curry
  • Meat broth (powder)
  • Salt
  • pepper

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Cut the chicken breast fillet into small pieces and fry in oil until golden brown. Remove the chicken breast fillet from the pan. Then add the cup of cream to the pan. If that’s too high in calories for you, use half cream and half milk. Bring the cream to a boil and season with salt, pepper, 1-2 teaspoons of meat stock powder, and plenty of curry powder. Season to taste, adding more seasoning if necessary. Add the mandarin oranges and pineapple pieces to the cream, then add the fried chicken breast. Boil the rice and serve.
