Ingredients for 2 servings:

  • 3 tbsp butter
  • 1 tbsp flour
  • 1 tbsp curry powder, mild
  • 1 tbsp curry powder, hot
  • 1 tsp garam masala
  • ½ tsp coriander powder
  • 1 tsp vegetable stock powder
  • ½ lemon(s)
  • 250 ml cream
  • 250 ml milk
  • salt and pepper

Working time approx. 15 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 25 minutes

delicious with pasta

Melt the butter in a saucepan, whisk in the flour along with the curry, garam masala, and coriander. Stir vigorously to avoid lumps. Deglaze with the milk and cream, and bring to a boil while stirring. Reduce the heat to low. Season to taste with salt and pepper, vegetable stock, and the juice of half a lemon. You can play around with the curry types and quantities; the sauce can be mild or spicy, depending on your taste. Let the sauce simmer gently for about 10 minutes until it reaches a creamy consistency. It goes very well with pasta and cauliflower.
