Fusilli with arugula

Ingredients for 4 servings:

  • 500 g pasta (fusilli)
  • 1 bunch arugula
  • 300 g beef fillet(s)
  • 2 tomatoes
  • 1 clove(s) garlic
  • salt and pepper
  • 2 tbsp oil
  • 1 tbsp butter
  • 1 tbsp balsamic vinegar
  • 1 chili pepper(s)
  • Sugar
  • Water

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Cut the beef fillet into very thin slices, fry briefly in oil, remove, season with salt, and keep warm. Deglaze the pan with 1 tablespoon of water and balsamic vinegar, and pour over the meat. Trim the arugula tips. Peel the tomatoes and dice them into small cubes. Finely dice the chili pepper and garlic. Sauté everything in the remaining oil and butter, seasoning with salt, pepper, and sugar. Cook the pasta and toss with the tomatoes, meat, and arugula.
