Curry rice with apricots

Ingredients for 4 servings:

  • 1 onion(s)
  • Fat for frying
  • 100 g dried apricots
  • 600 ml broth
  • 1 tbsp curry powder
  • pepper
  • Nutmeg, freshly grated
  • 250 g rice

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 40 minutes; Total time approx. 55 minutes

Peel and finely chop the onion. Sauté in a little fat in a saucepan for about 2 minutes until translucent. Finely chop the apricots and add them to the onion along with the curry powder, broth, pepper, and nutmeg. Mix everything well and bring to a boil. Then stir in the rice. Let it simmer in a covered pan over very low heat for about 40 minutes, until the broth is absorbed and the rice has become grainy. Add more broth if necessary. Approx. 269 kcal per serving.
