Ingredients for 2 servings:
- 1 small onion(s)
- 250 g shrimp
- 2 large tomatoes
- 50 g coconut milk
- ¼ cucumber(s)
- 1 large can of peach(s)
- 3 tbsp curry powder
- salt and pepper
- e.g. rice, cooked, hot
Instructions
Working time approx. 20 minutes; Total time approx. 20 minutes
Finely dice the onions and sauté. Add the shrimp and fry with 2 tablespoons of the curry. Cut the tomatoes into small pieces and add 3/4 of the way through (or add some paprika if desired). Cut the cucumber into tiny pieces and add with the remaining tomatoes. Add the coconut milk (or a little water if desired). If desired, you can also add a little can of peach juice for a fruity flavor. Bring to a boil and simmer slightly. Then cut the peaches into small pieces, add them, and let them warm through. Season with pepper, salt, and curry. Mix with rice and serve.
