Fitness apple and nut cake with quark topping

Ingredients for 1 servings:

  • 2 apples
  • 1 tbsp lemon juice
  • 3 eggs
  • 80 g flour (wholemeal)
  • 1 packet of baking powder
  • 120 g cane sugar
  • 125 g nuts, ground, e.g. almonds, hazelnuts, walnuts or mixed
  • ½ lemon(s), untreated
  • 10 g ginger root
  • 200 g quark, 20% fat
  • 2 tbsp applesauce
  • 75 ml whipped cream

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Wholesome, for 12 pieces, not too sweet and does not harm your slim figure

Peel and grate the apples. Then drizzle with lemon juice to prevent them from browning. Mix the flour and baking powder together and separate the eggs. Beat the egg whites until stiff peaks and chill. Beat the sugar and egg yolks with a whisk until frothy. Mix the apples, nuts, and the flour mixture with the sugar and egg yolk mixture, then fold in the egg whites. Pour the batter into a 22 cm diameter springform pan lined with baking paper. Bake in a preheated oven at 180°C for about 30 minutes. Quark topping: Grate the lemon zest with a coarse grater and juice the lemon. Peel and finely grate the ginger. Mix the quark with the applesauce, ginger, and lemon zest. Season with lemon juice. Whip the cream until stiff peaks and fold in. Spread over the cake just before serving. For decoration, you can use additional grated lemon zest or lemon halves. If using almonds, this cake has about 2440 kcal and 127 g of fat. For 12 pieces, this corresponds to 203 kcal/11 g fat per serving.
