Ingredients for 1 servings:

  • 150 g sugar
  • 150 g margarine
  • 1 packet of vanilla sugar
  • 200 g flour
  • 50 g cornstarch
  • 3 tsp baking powder
  • 1 egg yolk
  • 150 g ground almonds
  • 1 pinch of salt
  • 200 g dates
  • 50 g apricot(s), dried
  • 50 g sugar
  • ½ lemon(s), the juice
  • 200 g powdered sugar
  • 3 tbsp rum or orange juice
  • some dates for garnishing

Instructions

Working time approx. 1 hour 30 minutes; Rest time approx. 1 hour; Total time approx. 2 hours 30 minutes

Christmas cookies

Knead all the ingredients for the dough and chill. Roll out the dough and cut into equal-sized pieces. Bake in a preheated oven at 180°C until golden brown and let cool. For the filling, pit and chop the dates. Chop the apricots and puree them with the dates in a blender. Add the sugar and lemon juice. Spread the mixture over the cooled cookies and place a second cookie on top as a lid. Cut the remaining dates into strips. Mix the powdered sugar with rum or orange juice and brush the slices with it. Finally, place a date strip on top. Tip: Since the dough is quite crumbly and crumbles when rolled out, I cut open two freezer bags, place the dough between them, and roll it out. This is easier and doesn’t make a mess.
