Ingredients for 1 servings:
- 700 g apples
- 200 g spelt flour type 630
- 140 g butter, soft
- 100 g unrefined cane sugar
- 1 tsp vanilla paste
- 1 tsp paste (lemon paste)
- 1 tsp cinnamon (Ceylon cinnamon)
- 3 eggs, size M
- 2 tsp, leveled baking powder
- 5 tbsp milk
Instructions
Working time approx. 25 minutes; Rest time approx. 1 hour; Cooking/baking time approx. 45 minutes; Total time approx. 2 hours 10 minutes
for 8 pieces of cake
Grease a 26cm springform pan with 15g of softened butter. Preheat the oven to 180°C (top/bottom heat). Cream 125g of softened butter in a mixing bowl with a mixer until fluffy, then gradually add the brown sugar. Add the eggs and mix well again. Stir in the vanilla paste, lemon paste, and cinnamon. Add the milk, baking powder, and flour and mix everything well with a mixer. Pour the batter into the springform pan and spread evenly. Peel, quarter, and core the apples, then cut the quarters into 4-6 even slices. Cover the batter tightly in a circle. Bake for 30-40 minutes, checking your oven’s baking performance. After baking, open the springform pan and let the cake cool for 60 minutes. Then loosen the cake from the baking sheet with a knife and serve. Dust with powdered sugar, if desired.
