The perfect delicious birthday cake recipe with a picture and simple step-by-step instructions.

For the biscuit:

  • 150 g Margarine
  • 150 g Sugar white
  • 3 Free range eggs
  • 150 g Flour
  • 2 Tl Baking powder

For the cream:

  • 300 g Rama Cremefine Vanilla
  • 200 g Qimiq Classic Natural
  • 500 g Curd cheese 20%
  • 200 g Sour cream
  • 150 ml Elderflower syrup
  • 1 Pä Custard powder
  • 2 El Sugar white
  • 1 Pä Vanilla sugar
  • 2 sheet Gelatin white

and…

  • 250 g Red currants
  • 4 El Red and black currant jelly

Decoration:

  • 12 black Giotto
  • 12 black Pistachios

Biscuit:

  1. Separate the eggs, beat the egg whites until stiff.
  2. Mix the sugar and soft margarine together. Mix in the egg yolks well with an additional 1 teaspoon of water.
  3. Mix the flour and baking powder and stir in.
  4. Fold in the beaten egg whites. Put in a mold and bake in the preheated oven at 175 ° C for about 20 minutes.
  5. Cut through the cooled base once and brush with the currant jelly. Then turn the shape around again.

the creme:

  1. Mix the QimiQ well, mix in the sour cream and quark. Beat the Rama Cremefine until stiff and fold in.
  2. Mix with elderflower syrup. Mix in the custard powder, sugar and vanilla sugar well.
  3. Soak gelatine, dissolve and stir in. (I only used the QimiQ, but the currants were too juicy. Unfortunately, the cake didn’t set too hard for me. Next time I’ll add the gelatine …)
  4. Finally fold in the currants and spread them on the sponge cake base and spread on top in a wavelike manner.

Decoration:

  1. Place a Giotto ball on each petal and sprinkle the center with chopped pistachios.
