Delicious Black Forests

  • 150 gr Sugar
  • 130 gr Flour
  • 3 Tablespoon Cocoa powder slightly de-oiled
  • 6 st Eggs
  • 4 sheet Gelatin
  • 4 cl Kirsch
  • 750 gr Cream
  • 100 gr Powdered sugar
  • 50 gr Grated chocolate
  • 250 gr Amarena cherries
  • 1 glass Sour cherries
  1. Protein with 2 tablespoons. Beat water + a pinch of salt into snow. Skip the sugar and the egg yolk. Mix in the flour and cocoa. Pour the dough into a 26 cm form and bake at 180 degrees for 45 minutes.
  2. Cool and cut twice. Put a base on a cake plate, put a ring around it. Drain the amarena cherries on a sieve, as well as sour cherries. Dissolve the soaked gelatin in a little hot cherry juice.
  3. Mix a few tablespoons of sour cherry juice + amarena juice and sprinkle them on the bottoms. Whip the cream until stiff, fold in the icing sugar. Mix some cream with the gelatin and stir into the rest of the cream. Spread half of the cherries on the lower base.
  4. Put a third of the cream on top and put on the second base. The rest of the cherries. Spread half of the rest of the cream over the cherries and put the last crust on top.
  5. Cool the cake, then remove the ring and brush the cake with the rest of the cream all around. If the cake is to be placed in the refrigerator overnight, only use 500 ml of cream to fill the cake and continue processing the rest the next day. Sprinkle the cake with the chocolate.
