Ingredients for 4 servings:
- 1 pack of arugula
- 300 g pasta (spirelli or farfalle)
- 150 g walnuts, chopped
- 200 g cherry tomatoes
- 1 portion of Parmesan cheese, whole
- some salt and pepper
- some balsamic vinegar
- some olive oil
- 50 g tomatoes, dried
- 100 g olives, black
Instructions
Working time approx. 30 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 40 minutes

Wash the arugula. Cook the pasta and then rinse with cold water. Finely chop the sun-dried tomatoes and Parmesan cheese, and mix with the other ingredients in a large bowl. Season with balsamic vinegar and olive oil, salt, and pepper. Serve immediately. If desired, you can also serve with slices of white bread or baguette. It’s especially good for barbecues, as a light meal, or as an appetizer.
