Delicious stuffed baked potatoes

Ingredients for 4 servings:

  • 1 kg potatoes
  • 1 onion(s)
  • 1 pack of bacon
  • 1 cup sour cream
  • 1 pack of grated Gouda
  • salt and pepper

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 1 hour 20 minutes; Total time approx. 1 hour 40 minutes

Wash the potatoes, place them on a baking sheet, and bake at 200°C for one hour. Then halve them lengthwise and scoop out a layer about 1 cm thick. Transfer the insides to a bowl. Finely chop the onion. Fry the bacon without fat and add the onions. Tear the bacon slices into small pieces and mix with the onions and leftover potatoes. Add the sour cream and cheese, mix well, and season to taste. Fill the mixture into the scooped-out potatoes. Bake at 220°C for about 15 minutes.
