Ingredients for 4 servings:
- 2 clove(s) garlic, squeezed
- 2 tbsp butter
- 2 onions, diced
- 600 g broccoli, in florets
- Paprika powder
- 200 ml white wine
- 600 ml vegetable stock
- 2 tbsp chives, in rolls
- 1 red bell pepper(s), cut into very thin strips
- Crème fraîche
- salt and pepper
Instructions
Working time approx. 15 minutes; Total time approx. 15 minutes
Sauté the garlic and onions in butter. Add the broccoli florets and sauté briefly. Pour in the broth and wine. Season with paprika, salt, and pepper. Simmer over medium heat for about 8 minutes. Remove a few broccoli florets and set aside. Puree the remaining broccoli. Add the chives and bell pepper strips and simmer for another 5 minutes. Season to taste, arrange on plates, garnish with the remaining broccoli florets and crème fraîche, and serve immediately.
