Ingredients for 1 servings:
- 125 g margarine
- 250 g sweetener (diabetic sweetener)
- 2 packets of vanilla sugar
- 300 g flour (wholemeal flour), as dough takes
- 500 g quark (low-fat quark)
- 1 pudding powder, vanilla or cream
- 5 eggs
- ⅛ liter milk
- Lemon(s) – peel, grated
- possibly powdered sugar and raisins
- oil
- 2 egg whites
- Salt
Instructions
Working time approx. 30 minutes; Total time approx. 30 minutes
Base: Combine 125g margarine, 100g diabetic sweetener, 1 egg, 1 packet of vanilla sugar, 1 pinch of salt, and the whole-wheat flour to form a dough. You can add 1/2 packet of baking powder if you like. The dough shouldn’t be too stiff, but rather pliable. It should roll out easily later in the springform pan (or baking sheet). Wrap the dough in foil and let it rest in the refrigerator for about 1/2 hour. Then, place the dough on a greased baking sheet (with margarine) and sprinkle with breadcrumbs. Roll out the dough with a rolling pin and shape it into a rimmed shape. Prick the dough several times with a fork. Topping: Place the quark in a bowl and mix with 150g of diabetic sweetener, the uncooked pudding, 5-6 tablespoons of rapeseed oil, the milk, 4 egg yolks, 1 vanilla sugar, 2 stiffly beaten egg whites (with 1 pinch of salt), the grated untreated lemon zest, and, if desired, a handful of soaked raisins. Spread the topping mixture onto the rolled out dough and bake in the oven at 180°C for approx. 35-40 minutes. When the quark mixture cracks easily, it’s done. Do not open the oven door during baking, or it will collapse! Topping: For the topping, you need 4 egg whites, 1 pinch of salt, and diabetic sweetener or powdered sugar to taste. Beat the egg whites with salt until they stop running out of the bowl, then add the diabetic sweetener or powdered sugar. Remove the finished cake from the oven and brush with beaten egg whites. Now place the cake back in the oven and bake at approximately 250°C for a few minutes (2-3 minutes), until the topping is a beautiful golden yellow. Then remove the cake from the oven and let it cool.
