Ingredients for 4 servings:
- 300 g leaf spinach, roughly chopped
- 2 m.-sized carrot(s), halved and sliced
- 2 celery, sliced
- 1 large onion(s), finely diced
- 1 garlic clove(s), squeezed
- 750 ml vegetable broth (well seasoned)
- 800 g tomatoes, chopped with juice from the can
- 2 bay leaves
- 1 tsp basil, dried
- 1 tsp oregano, dried
- 1 pinch of black pepper, ground
- 1 chili pepper(s), dried and finely ground (alternatively some chili powder)
- salt and pepper

Working time approx. 20 minutes; Cooking/baking time approx. 5 hours; Total time approx. 5 hours 20 minutes

This recipe is designed for a 3.5 L crockpot. Add all ingredients to the crockpot and stir. Cover. Simmer on high for 4, preferably 5, hours. Season with salt and pepper, if desired. Enjoy it on its own as a stew, or if you’re not on a diet, serve it with pasta, grated mozzarella, and toasted baguette. Tip: Alternatively, you can use frozen leaf spinach. Thaw it first and then roughly chop it.
