Kefir-Oat Crumbs

Ingredients for 16 servings:

  • 500 g kefir 1.5%
  • 20 g yeast
  • 200 ml water, approx.
  • 2 tsp beet syrup or sugar
  • 20 g salt
  • 100 g oat flakes, wholegrain
  • 400 g wholemeal spelt flour
  • 500 g wheat flour type 550
  • possibly flour for working the rolls

Instructions

Working time approx. 30 minutes; Rest time approx. 3 hours; Cooking/baking time approx. 20 minutes; Total time approx. 3 hours 50 minutes

very fluffy rolls

Mix the yeast with the sugar beet syrup until liquid. Add the kefir and water and mix everything together. Add the oats, both flours, and the salt and knead well. Let the dough rise well, then knead it again by hand and roll it into a ball, then divide it into 16 pieces. Roll each of these dough segments into a ball and shape it into the desired roll shape (round, oval, etc.). Place the formed rolls on a baking sheet lined with baking paper for a final rise (approx. 30 min. – 1 hr.). Preheat the oven to 220°C (top/bottom heat). Score the rolls if desired and spray with water. Bake for approx. 15-20 minutes, until they have turned a beautiful golden brown. Oven temperatures and baking times may vary depending on the oven.
