Ingredients for 9 servings:
- 125 ml milk
- 90 g butter
- ½ pkt. vanilla sugar
- flavoring (lemon flavor)
- 500 g flour
- 40 g yeast
- ½ tsp sugar
- 1 tbsp water, lukewarm
- ½ tsp salt
- 1 egg(s)
- 65 g sugar
- 50 g chocolate (milk)
- Fat, for frying
Instructions
Working time approx. 35 minutes; Rest time approx. 1 hour 35 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 2 hours 25 minutes
Gently warm the milk with butter, vanilla sugar and lemon flavoring (e.g. in a microwave). Now put the flour in a bowl and make a well in the middle. Put the yeast, 1/2 tsp sugar and 1 tbsp lukewarm water into this well and make a pre-dough together with a little flour from the edges. Let this rise for approx. 10 to 15 minutes. Now add the egg, 65g sugar, 1/2 tsp salt and the warmed milk mixture and knead everything into a dough until it pulls away from the sides of the bowl. Add water a drop at a time if necessary. Now form the dough into a ball and let it rise, covered, for approx. 1 hour in a warm place. Knead the dough again and roll it out to a thickness of approx. 2.5 to 3 cm. Now cut out circles with a glass. For the hole in the middle, use a small shot glass to remove the dough. Place the donut blanks on a prepared baking sheet, cover, and let rise for another 15 to 20 minutes. Preheat a deep fryer to approximately 170°C (350°F) and fry the donuts in batches for approximately 2 minutes on each side (the fryer basket is not needed). Remove the finished donuts from the oil with a slotted spoon and let them drain on paper towels. Melt the chocolate in a double boiler. Dip one side of each donut into the chocolate to finish.
