Ingredients for 1 servings:

  • 300 g flour
  • 12 g matcha powder
  • 100 g sugar
  • 1 tbsp water
  • 200 g butter
  • Flour for the work surface
  • 125 g quince jelly
  • ½ lime(s), grated zest
  • 1 tbsp powdered sugar
  • 1 pinch of matcha powder

Instructions

Working time approx. 45 minutes; Rest time approx. 30 minutes; Cooking/baking time approx. 12 minutes; Total time approx. 1 hour 27 minutes

Place the dough ingredients in a bowl and chop thoroughly with a knife. Knead by hand until smooth and chill for about 30 minutes. Preheat the oven to 180°C (top/bottom heat). Roll out the dough on a floured surface to a thickness of 2-3 mm. Cut out circles with a diameter of about 5-6 cm. Cut a hole in the center of half of the circles. Place the circles and rings on a baking sheet lined with baking paper and bake for about 12 minutes. Mix the quince jelly with the lime zest. Brush the circles with it. Mix the powdered sugar with a pinch of matcha and sprinkle the rings with it. Then assemble the cookies.
