Dready's Asian noodle stir-fry

Ingredients for 4 servings:

  • 500 g Chinese egg noodles
  • 450 g turkey breast fillet(s)
  • 1 red bell pepper(s)
  • 1 bell pepper(s), yellow
  • 1 stalk(s) leek, small
  • 1 large onion(s)
  • 2 small carrots
  • 2 handfuls of bamboo slices
  • 50 g soybean sprouts
  • 1 garlic, Chinese
  • 3 tbsp soy sauce, Chinese, dark
  • 3 tbsp sauce (teriyaki sauce)
  • 2 tsp sauce (Hoi Sin sauce)
  • 1 tsp sambal oelek
  • 1 tsp coriander, ground
  • 1 tsp chili powder
  • 1 tsp spice mix (5-spice powder)
  • 1 cm ginger, freshly grated
  • Salt
  • pepper
  • Vegetable broth or chicken broth
  • Oil, peanut or ginger-coriander

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Cut the turkey breast fillet into strips, trim and finely chop the vegetables. Peel and press the Chinese garlic. Heat the oil in a wok until very hot and brown the meat. Season with salt and pepper. Then add the vegetables one at a time: first the onions (fry with the meat for 2-3 minutes), then the bell peppers and carrots (fry for about 3-4 minutes), leeks and bamboo shoots, and finally the soybean sprouts. Meanwhile, soak the egg noodles in hot broth (chicken or vegetable broth). Add the soy sauce, teriyaki sauce, hoisin sauce, sambal oelek, garlic, and seasonings one at a time and stir well. Then add the noodles and broth (amount to taste) to the wok and mix everything well. Season to taste and serve.
