Dressing for endive salad

Ingredients for 4 servings:

  • 2 m.-sized potatoes
  • 1 m.-sized onion(s)
  • 1 tbsp oil, neutral
  • 40 ml cream
  • 2 tbsp vinegar (apple)
  • 1 pinch(s) of sugar
  • 2 stalks of lovage
  • Black pepper, freshly ground
  • Salt

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Boil the potatoes in salted water, let cool, peel, and mash, adding the oil as you go. Finely dice the onion, chop the lovage very finely, and combine all the ingredients. These quantities are guidelines only; adjust to your taste. Season with salt, pepper, and sugar. If you don’t have lovage, a few dashes of Maggi seasoning will do (although I don’t use this because of the flavor enhancers). That’s it. If you have the endive, wash it, remove the tough stalk, and cut it into fine strips. Toss with the dressing just before serving. This recipe comes from my mother-in-law.
