Drunken Chicken

Ingredients for 4 servings:

  • 1 m.-sized chicken, approx. 1.5 kg
  • 4 small onions
  • 4 m.-sized tomatoes
  • 8 small potatoes
  • 2 cloves garlic
  • 1 sprig(s) rosemary
  • some thyme or lemon thyme
  • ¾ bottle of white wine
  • salt and pepper
  • Flour
  • Fat, for frying

Instructions

Working time approx. 25 minutes; Total time approx. 25 minutes

Chicken in white wine

Cut the chicken into 8 pieces and remove the skin (optional). Season with salt and pepper, and coat in flour. Lightly brown in a large pot. Add the whole onions, potatoes, and tomatoes, along with 2-4 finely chopped garlic cloves, and deglaze with white wine until almost covered. Add a little thyme and a sprig of rosemary. Simmer on low heat for about 40 minutes. If desired, you can thicken the sauce slightly. I prefer to prepare this dish in an earthenware pot, as I’m cooking on gas; but it’s also delicious in any other pot.
