Ingredients for 3 servings:
- 3 large pork schnitzels
- salt and pepper
- Paprika powder, sweet
- Paprika powder, hot
- 10 potatoes, floury
- e.g. milk
- salt and pepper
- some butter, melted
- 250 g green beans, frozen
- salt water

Working time approx. 45 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 1 hour 10 minutes
To make the duchess potatoes, first prepare the mashed potatoes. You can, of course, use a packaged mashed potato, but I prefer to make them myself. Peel and quarter the potatoes. Meanwhile, bring a pot of water to a boil and add a little salt. When the water is bubbling, boil the potatoes in the pot for about 10 minutes, until they are very soft. Then drain the water and mash the potatoes in a pot or large bowl with a little milk and a little melted butter, and season with salt and pepper. Add the milk a little at a time until the mashed potatoes are nice and creamy. Season to taste. Spoon the finished mashed potatoes into a piping bag and pipe small “mounds” onto a baking sheet lined with baking paper. Place the duchess potatoes in the oven at 150°C (fan oven) for about 20–25 minutes, until the tops are nicely browned. Meanwhile, halve the pork cutlets and season generously with paprika, pepper, and salt, then fry until the meat is cooked through. For the beans, boil a pot of water, add salt, and once it’s bubbling, add the beans. I boiled them for 8-10 minutes, but I prefer them softer than too hard—always check the packaging for instructions.
