Ingredients for 4 servings:
- 1 pack of bread dumplings (mini or mini potato dumplings), approx. 330 g or homemade
- some salt
- 1 bunch parsley, flat
- 3 sausages, uncooked
- some lemon zest
- 2 stalk(s) leeks
- 150 g cherry tomatoes
- 3 tbsp olive oil
- some pepper, mixed or black, from the mill
- some nutmeg, freshly grated (optional)
- 1 tbsp butter
- 50 ml vegetable stock
- 100 ml cooking cream
Instructions
Working time approx. 25 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 50 minutes
Cook the mini bread rolls or mini potato dumplings in plenty of boiling, lightly salted water according to the package instructions. Then remove and set aside. Trim the leeks, cut them lengthwise, rinse them thoroughly, and cut into thin rings or strips. Wash and trim the cherry tomatoes. Rinse the parsley, shake it dry, and finely chop the leaves. Squeeze the sausage meat out of the skin and knead it with the chopped parsley and a little lemon zest. Then, with moistened hands, form the mixture into small dumplings. Heat a wok or a large, non-stick frying pan and fry the sausage dumplings without adding any fat until browned all over. Then remove. Heat 2 tablespoons of olive oil in the wok or large, non-stick frying pan. Lightly fry the leek rings or strips in it, turning occasionally, and season with a little salt, some mixed or black pepper from the mill, and a little nutmeg (about a pinch). Then remove them too and set aside. Heat 1 tbsp of olive oil with the butter in a wok or large, non-stick frying pan and fry the mini bread or potato dumplings until lightly brown. Then add the leek rings or strips, cherry tomatoes, and sausage dumplings and heat everything briefly again, turning occasionally. Then add the vegetable stock and cooking cream, bring to the boil briefly, season with a little mixed or black pepper and salt if desired, and serve. If you like, serve with freshly grated mountain cheese and fresh baguette or fresh bread. Instead of mini bread or mini potato dumplings, you can also use the filled mini potato dumplings, for example. For example, you can use it with cheese and bacon, cream cheese and herbs, or mushrooms. A few blanched Brussels sprout leaves or small Brussels sprout heads also go very well with it.
