Dumplings: Wild Garlic Dumplings
The perfect dumplings: wild garlic dumplings recipe with a picture and simple step-by-step instructions.
- 250 ml Milk
- 20 g Butter
- 1 pinch Nutmeg, grated
- 100 g Durum wheat semolina
- Salt and pepper
- 20 g Wild garlic fresh
- 2 piece Eggs
- 2 piece Salt water
- 1 tablespoon Clarified butter
- Bring the milk with butter, nutmeg, salt and pepper to the boil and slowly pour in the semolina, stirring constantly. Remove from heat and stir until a dumpling has formed.
- Mix in the wild garlic, chopped into fine pieces, and let the mixture cool down a little.
- Bring enough water (approx. 2.5 l) to the boil and season with salt.
- Carefully stir the two eggs into the slightly cooled semolina and season to taste.
- Cut off large knobs with two tablespoons and let them steep in gently boiling water for about 20 minutes.
- Take out, drain and leave to cool.
- Just before serving, heat the clarified butter in a pan and toss the wild garlic dumplings in it and let it get hot.
