Dutch Asparagus Tart

Ingredients for 2 servings:

  • 1 tbsp oil
  • 3 sheets of puff pastry
  • 500 g asparagus
  • 125g mozzarella
  • 2 eggs
  • 125 g crème fraîche
  • 60 g Parma ham
  • salt and pepper
  • nutmeg

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Brush a baking dish with oil and place the puff pastry sheets in it. Peel the asparagus, cut into pieces, and cook in salted water until tender. Let the cooked asparagus cool slightly, then place it on the puff pastry. Dice the mozzarella and spread it on top of the asparagus. Whisk the eggs with the crème fraîche, season with salt, pepper, and nutmeg, and pour the mixture over the mozzarella. Cut the ham into strips and arrange them on top. Place the baking dish in the center of a preheated oven and bake the asparagus tart at 200°C (fan oven: 180°C) for about 35 minutes, until the ham is nicely crispy.
