Ingredients for 1 servings:

  • 250 g butter
  • ¼ tsp salt
  • 300 g brown sugar
  • 2 eggs
  • 600 g flour
  • 1 tsp, leveled baking powder
  • 10 g spice mix (speculoos)
  • some flour, for the molds

Instructions

Working time approx. 40 minutes; Rest period approx. 1 day; Total time approx. 1 day 40 minutes

For 50 pieces

Mix the butter with salt, eggs, and sugar until smooth. Knead the flour into the dough and chill for 24 hours. Take a piece of dough and place it in the flour-dusted mold (speculoos mold) and press it in with your hand or a rolling pin. Once the mold is well filled, which you will feel when you press it down, scrape off the remaining dough from the mold with a knife or a cutting wire (if available). Remove the dough figure from the mold by turning it over and tapping it gently. Preheat the oven to 200°C. Place the dough figures on a baking sheet lined with baking paper and bake at 175°C on the middle rack for 15-20 minutes, depending on the thickness of the dough.
