Easy banana bread without added sugar

Ingredients for 1 servings:

  • 4 banana(s), ripe
  • ½ tsp, crushed cinnamon powder (Ceylon cinnamon)
  • 2 eggs
  • 4 tbsp rapeseed oil
  • 350 g flour
  • ½ pack of baking soda

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 45 minutes; Total time approx. 1 hour

Only with the sweetness of bananas, suitable for Baby Led Weaning (BLW)

Preheat the oven to 180°C (350°F). Peel the bananas and mash them with a fork. Mix them in a bowl with the cinnamon, egg, baking soda, and oil. Gradually add the flour until the mixture is sticky and thick. Since both eggs and bananas vary in size and therefore in moisture content, the amount of flour should be adjusted individually. Line a loaf pan with baking paper and pour in the batter. Bake on the middle rack for about 45 minutes. My recipe is for a slightly banana-sweet pastry (not a traditional sweet cake).
