Ingredients for 1 servings:
- 1 cake base (sponge cake, dark, three-layer)
- 500 g strawberries
- 250 g mascarpone
- 500 g quark (low-fat quark)
- 500 g cream
- Chocolate shavings
- Lemon(s) peel
- 2 packets of vanilla sugar
- 185 g sugar
- Sugar for the strawberries
- Lemon balm
Instructions
Working time approx. 30 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 30 minutes
Whip the cream until stiff. Using a hand blender, puree 1/3 of the strawberries and sugar. Slice 1/3 of the strawberries. Mix the quark, sugar, lemon zest, and mascarpone, then add half of the cream and chocolate flakes. Cover two layers each with strawberry puree. Spread the cream on top, top with strawberry slices, and stack them on top of each other. Cover the entire cake (including the sides) with cream, and garnish with whole strawberries and lemon balm. Chill thoroughly, perhaps in the freezer for half an hour.
