Ingredients for 2 servings:

  • 3 eggs, hard-boiled
  • 3 large tomatoes
  • 3 tbsp mayonnaise, (low fat)
  • salt and pepper
  • Herbs as desired: parsley, chives, dill or basil

Instructions

Working time approx. 5 minutes; Total time approx. 5 minutes

my mom’s way

Peel the eggs, halve them, and slice them. Wash the tomatoes, halve them, and slice them as well. Mix with mayonnaise and season with salt, pepper, and herbs to taste. Great on bread, toast, rolls, or with pretzels.
