Ebly arugula salad

Ingredients for 4 servings:

  • 2 bags of Ebly
  • 1 pack of arugula
  • 1 cucumber(s)
  • 1 bell pepper(s)
  • 1 onion(s)
  • 1 bunch of chives
  • 1 bunch of parsley
  • 1 tbsp lemon juice
  • 5 tbsp oil
  • 10 tbsp vinegar
  • some salt and pepper

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 25 minutes

Perfect for grilling

Cook the Ebly in salted water according to the package instructions and let cool. Wash and chop the cucumber, bell pepper, onion, chives, and parsley, and place them in a bowl. In a separate bowl, combine the vinegar, oil, salt, and pepper and pour over the vegetables. Once the Ebly is cool, add it to the bowl, let it sit for a while, and just before serving, stir the arugula into the salad and season again to taste.
