Ingredients for 2 servings:

  • 4 eggs
  • 500 ml tomato(s), pureed or homemade tomato sauce
  • salt and pepper
  • basil
  • Balsamic vinegar
  • Sauce thickener

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 1 hour 30 minutes; Total time approx. 1 hour 40 minutes

Hard-boil the eggs and slice them with an egg slicer. Chop the tomatoes, boil them, and reduce them. Either pass them through a sieve or puree them with a hand blender. Season to taste and thicken with a sauce thickener if desired. Place the chopped eggs on a plate and pour the sauce over them to warm them slightly. Serve with boiled potatoes.
