Ingredients for 4 servings:

  • 2 rolls, stale
  • 6 eggs, hard-boiled
  • 100 g ham, cooked
  • 1 onion(s)
  • 2 tbsp herbs, finely chopped (parsley, chives…)
  • 1 egg(s)
  • Breadcrumbs
  • salt and pepper
  • Clarified butter

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Soak the bread rolls, finely mash the boiled eggs, dice the ham, and grate the onion. Mix the ingredients with the squeezed-out bread rolls, herbs, and fresh egg to form a batter. Season generously with salt and pepper. Form the mixture into patties, coat in breadcrumbs, and fry in hot clarified butter. Serve with mashed or boiled potatoes and a crisp salad or herb-flavored quark!
