Ingredients for 1 servings:
- 160 g flour
- 40 g cornstarch
- 1 tbsp cocoa powder, unsweetened OR
- 1 pack of pudding powder (chocolate)
- 7 protein
- 100 ml oil
- 175 g sugar
- 1 packet of vanilla sugar
- 1 tsp cinnamon
- ¼ tsp nutmeg
- ½ tsp clove(s)
- 15 g ginger, freshly chopped
- 1 pinch of cardamom
- 50 g almonds, chopped
- 100 g raisins OR:
- Prune(s)
- 1 pinch of salt
- ½ tsp baking powder
Instructions
Working time approx. 15 minutes; Cooking/baking time approx. 40 minutes; Total time approx. 55 minutes

Place the egg whites in a clean bowl and beat. Add the sugar, vanilla sugar, and salt and beat until the sugar has dissolved. In another bowl, mix the flour with the cornstarch or pudding powder, cocoa, baking powder, all the spices, as well as the raisins OR prunes (finely chopped, e.g.), almonds, and ginger. Once the sugar has dissolved, add the flour mixture and oil at the same time, if possible, and fold in very carefully. Pour the batter into a well-greased large loaf pan and bake on the middle rack of a preheated oven at 165°C for 40 minutes. (Please be careful, every oven heats differently, so do the skewer test. If no batter sticks to the skewer, the cake is done.) Allow to cool completely and only then remove from the pan. Cover with glaze, if desired. Perfect for using up egg whites!
