Ingredients for 6 servings:
- 6 small zucchini
- 6 eggs
- 200 g Parmesan
- 100 g butter for frying
- some olive oil
- salt and pepper

Working time approx. 20 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 40 minutes
Fried egg on zucchini cream
Cook the zucchini in boiling salted water for a few minutes until soft. Then slice the vegetables and brown them in a little hot butter. Season the zucchini slices with salt and pepper, add a few drops of olive oil, whisk everything together, and keep warm. Fry the eggs in a hot pan with the remaining butter until fried. Use a ring to shape them into circles. Spread the zucchini cream on warmed plates and carefully drop the cooked eggs into them. Season the eggs with a little salt and pepper. Grate the Parmesan cheese and distribute the slices evenly.
