Omelette with spinach and goat cheese – like pizza from the oven

Ingredients for 2 servings:

  • 1 tbsp olive oil
  • 4 m.-sized eggs
  • 1 handful of leaf spinach, frozen
  • 50 g goat’s cheese
  • pepper
  • n. B. herbs

Instructions

Working time approx. 5 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 20 minutes

Preheat the oven to 200°C (top/bottom heat). Crack the eggs into a bowl and mix with a fork. Heat the olive oil in an ovenproof skillet. Add the eggs to the pan and fry briefly. The mixture should be just set. Top with the goat’s cheese and spinach and let set in the preheated oven on the middle rack for 15 minutes. Season with pepper and herbs and enjoy.
