- 10 eggs
- 1 liter of milk
- Salt
- Sugar

Whisk the eggs and milk together well. Add a little salt and sugar. If possible, place the mixture in an earthenware pot and heat it in a double boiler until it curdles and solidifies. (This also works in the microwave – check in now and then and stir the mixture gently to ensure it cooks evenly and not from the outside in.) Pour the mixture into a sieve and let it drain. In the Siegerland region, a bundt cake-like, perforated earthenware dish is used for this. Draining can take an hour or more. Turn the resulting Eierkäse upside down and let it cool. The Eierkäse is cut into thick slices and eaten on fresh white bread. Here in the Siegerland region, the slices are often simply sprinkled with sugar and cinnamon.
