Eggnog apple cake

Ingredients for 1 servings:

  • 150 g flour
  • 50 g starch flour
  • 150 g butter
  • 140 g powdered sugar
  • 3 egg yolks
  • 3 egg whites
  • 1 tsp, leveled baking powder
  • 1 tsp, heaped vanilla sugar
  • 190 ml eggnog
  • 2 apples, e.g. Boskoop
  • 150 g flour
  • 120 g butter
  • 100 g brown sugar

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 1 hour 10 minutes; Total time approx. 1 hour 40 minutes

The recipe is suitable for a 26 cm springform pan, which you should line with baking paper and grease the sides. Beat the egg whites until stiff and set aside. Mix the butter together with the egg yolks, powdered sugar and vanilla sugar. Then gradually stir in the egg liqueur. Then stir in the flour, cornstarch and baking powder. Finally, fold in the egg whites. Pour the batter into the prepared pan and preheat the oven to 175 degrees Celsius (top/bottom heat). Peel and core the apples. Cut the fruit into wedges and arrange them close together on the batter. Knead the butter, brown sugar and flour into a crumble (best done by hand) and crumble it over the apples. Bake the cake in the oven for 70 minutes. Then remove the sides of the pan and let the cake cool. If you like, you can make a delicious glaze from powdered sugar and egg liqueur and sprinkle it over the cake.
