Ingredients for 1 servings:
- 400 g flour
- 250 g butter, soft
- 100 g sugar
- 3 tbsp sugar
- ½ pack of lemon(s) – peel
- 2 egg yolks
- 1 tsp cinnamon
- 3 sheets of white gelatin
- 100 g whipped cream
- 200 ml egg liqueur
Instructions
Working time approx. 45 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 45 minutes
Knead flour, butter, 100g sugar, zest, and egg yolks until smooth. Refrigerate dough for 1 hour. Roll out dough in portions between 2 layers of baking paper to a thickness of about 3mm. Using a star cutter (5cm diameter), cut out about 70 stars. Place stars on baking sheets lined with baking paper. Bake one after the other at 200°C for about 9 minutes. Mix 3 tablespoons of sugar and cinnamon and spread on half of the biscuits. Soften gelatin. Heat cream and dissolve squeezed gelatin in it. Stir in liqueur. Refrigerate cream for about 20 minutes. Spread the remaining half of the biscuits with the mixture. Place one biscuit with sugar/cinnamon on each biscuit.
