Eggplant Mince Gratin

- 1,5 Pc. Eggplant fresh
- 1 Pc. Diced onion
- 1 Can Peeled tomatoes
- 100 g Grated Emmental
- Oregano
- Dried basil
- Dried tarragon
- Extra virgin olive oil
