Eggs in mustard sauce

Ingredients for 4 servings:

  • 500 g vegetable stock
  • 750 g potatoes, cut into pieces
  • 8 eggs
  • n. B. Milk to refill
  • 2 tbsp mustard
  • salt and pepper
  • 2 tbsp flour
  • herbal salt

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

for the Thermomix TM 21 and 31

Weigh the vegetable stock into the mixing bowl. Hang the potatoes in the simmering basket in the mixing bowl and cook for 25 minutes on Varoma level 1. Add 8 eggs to the Varoma and cook with the eggs. Once the cooking time is up, set the Varoma and simmering basket aside. Top up the remaining stock with milk to make 1/2 liter. Add the mustard, salt, pepper, flour, and herb salt to the stock in the mixing bowl and cook for 4 minutes at 100°C on level 4. Peel the eggs, then chop them into small pieces and place them in a bowl with the sauce.
