Alberto's fragrant potatoes

Ingredients for 4 servings:

  • 4 potatoes, very large, floury
  • 4 cloves garlic
  • 3 bunches of chives
  • 8 eggs
  • salt and pepper
  • olive oil
  • possibly Parmesan

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 45 minutes

Boil whole potatoes in salted water until tender. Crush the garlic and finely chop the chives. Peel the potatoes and then roughly mash them with a fork. Stir in the garlic, chives, salt, and pepper, and season generously with olive oil. Poach the eggs in salted water with a little vinegar; the yolks should still be runny. Serve the potatoes, two eggs per serving, very warm. Drizzle with a little oil and, if desired, sprinkle with some Parmesan cheese. This recipe is quick, fragrant, and tastes heavenly.
