Eggs in pepper – tomato – sugo

Ingredients for 2 servings:

  • 1 onion(s)
  • 2 garlic cloves
  • 400 g pointed peppers, roasted, pickled
  • 1 pack of tomatoes, pureed (Parmalat)
  • 2 tbsp oil
  • salt and pepper
  • Paprika powder
  • 4 eggs
  • 80 g herb cream cheese
  • Basil, a few leaves

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Peel and finely dice the onion and garlic. Dice the bell peppers. Heat oil in a pan and fry the onion and garlic until translucent. Add the paprika and Parmalat, season with salt and pepper. Simmer uncovered for two minutes. Make four wells, crack the eggs open, and carefully drop them into the wells one at a time. Season the eggs with pepper, salt, and a little paprika. Sprinkle the cream cheese flakes in the pan. Cook for about 10 minutes on speed 1-2. Scatter basil leaves over the top and serve. Garlic baguette goes well with this.
