Eggs in tomato sauce

Ingredients for 4 servings:

  • 1 onion(s)
  • 1 tbsp clarified butter
  • 1 pack of tomatoes, pureed
  • salt and pepper
  • Cayenne pepper
  • 2 gherkins
  • 2 tbsp ketchup
  • 8 eggs, hard-boiled
  • 1 bunch of chives
  • Sugar

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Finely chop the peeled onion and fry in hot clarified butter until translucent. Add the tomatoes and simmer over medium heat for about 10 minutes. Season with salt, pepper, and cayenne pepper. Add the finely diced gherkins and ketchup and let stand for a few minutes. Season with sugar to taste. Peel and halve the hard-boiled eggs, add them to the sauce, and sprinkle with chives. This dish goes very well with potatoes or mashed potatoes.
