Eggs with mustard sauce

Ingredients for 4 servings:

  • 10 eggs
  • 1 cup sour cream
  • 1 onion(s), finely chopped
  • 3 apples
  • 4 tbsp mustard, medium hot
  • 1 tbsp mustard, sweet
  • ½ bunch chives
  • Salt and pepper, from the mill

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 8 minutes; Total time approx. 28 minutes

Alternative to classic mustard sauce

Peel and core the apples. Coarsely grate one apple and finely grate the others. Peel and finely chop the onion and add it to the apples. Add the sour cream and mix, as well as the sweet mustard. Add between four and eight tablespoons of medium-hot mustard, depending on your taste. Mix everything well and set aside. Boil the eggs until soft-boiled. Cool two eggs quickly under cold running water, peel, finely chop, and add to the mustard sauce. Wash the chives, dry them briefly, and cut them into rolls. Stir them into the sauce. Peel and halve two eggs per person. Serve with the mustard sauce. Boiled potatoes are delicious with this.
