Ingredients for 4 servings:
- 100 g flour
- 1 egg(s)
- 250 ml milk
- salt and pepper

- 1 kg potatoes (raw or fully cooked jacket potatoes)
- 3 onions
- 50 g ham, cooked
- 50 g bacon
- Caraway, whole
- 2 tbsp clarified butter

a quick meal with little effort, also suitable for using leftovers
Make a thin pancake batter from the flour, egg, milk, salt, pepper, nutmeg, and fresh herbs (add a little more milk if necessary). Let the batter rest for at least 30 minutes until soft. Dice the ham and bacon into small cubes. Dice the onion as well. If using raw potatoes: Wash, peel, and thinly slice the potatoes. Fry the bacon in a hot pan with about 2 tablespoons of clarified butter. Fry the potatoes in the hot fat for about 10 minutes until crispy. After about 5 minutes, add the onions and ham and fry. Season generously with salt, pepper, and caraway seeds. If using boiled potatoes (preferably from the day before): Slice the potatoes. Fry the bacon in a hot pan with 1 tablespoon of clarified butter. Fry the potatoes, onions, and ham until crispy (this doesn’t take as long as with raw potatoes). Season generously with salt, pepper, and caraway seeds. In the meantime, preheat the oven. Top/bottom heat 200°C, fan oven 180°C (no need to preheat!) Lightly grease a tart or casserole dish with clarified butter. Layer the potatoes evenly in the dish and pour the pancake batter over them. Bake in the hot oven for about 30 minutes. Serve with a salad. The pill cake can be made with any kind of leftovers from the fridge (e.g. pasta instead of potatoes, with leftover meat/sausage, with leftover vegetables (in which case use fewer potatoes)…). If you like, you can also top it with cheese (also with leftovers). A vegetarian version (without ham and bacon, e.g. with potatoes and spinach…) is also possible! You can also experiment with the spices. The sky’s the limit.
